Slimming World High Energy 12 Vegetable Super Speed Soup Recipe

After me showing you my Slimming World Syn Free Soup I wanted to share another of my favourite Slimming World soup recipes. This delicious vegetable soup recipe fits all of my criteria: it works with the Slimming World plan, it’s easy to make, and this recipe makes a good-sized portion of soup. Also, the 12 Vegetable Soup contains hearty ingredients like beans and lentils, so you’ll definitely feel satisfied after you eat this.

The best bit for me though is that the majority of the items listed in this recipe are actually consider super speed foods so it can increase your weight loss. (you can read more about Slimming World super speed foods here)

Soup is one of my favourite things to eat for lunch, so I’m always on the lookout for easy but filling recipes I can use with the Slimming World plan. I’m also a big fan of freezing leftovers for later, so I love recipes that make more than one serving of food. Though if I am honest I prefer it with a big wholemeal roll and a bit of butter. But on Slimming World we can’t all be perfect can we?


I also love that you can alter this recipe to your needs. You can use vegetables only and make this a completely vegetarian meal, but it works just as well with chicken or beef too. You can also add whatever herbs you personally prefer, and season it with salt and pepper to taste.

After you finish eating, be sure to put some individual portions of this soup into plastic container and throw them into the freezer. I know you’ll want to eat this Slimming World soup recipe again soon!

Ingredients
1 Can Mixed Beans
1 Can Baked Beans
1 Large Onion
4 Medium Sliced Carrots
Handful Of Split Lentils
2 Large Leeks
2 Parsnips
1 Green Pepper
1 Red Pepper
1 Yellow Pepper
1 Can Green Lentils
2 Cans Chopped Tomatoes
2 Vegetable Stock Cubes
Salt & Pepper
Mixed Herbs
Water
Instructions
Chop up the leeks, onion, carrots, parsnips and peppers. And add the chopped vegetables to the pan.
Add all other ingredients to pan, except salt and pepper.
Fill the pan with water, making sure there is enough to cover all of the ingredients. Then bring mixture to a boil.
Reduce to a simmer and then cook until the ingredients are soft (I like to simmer soups for around 45 minutes.)
Remove from heat and season with salt and pepper to taste. Add more herbs so that it matches your own personal taste.
Serve as is, or blend if desired. We blend ours for a smooth look and sometimes use a little for a sauce over some grilled or steamed meat and it is very tasty.
